Enjoy this easy, healthy recipe which will make you look like you really “like to cook”. If you want to make this recipe even easier, serve the salmon with a bag of green salad instead of the broccoli.
5 tablespoons Extra Virgin olive oil, divided
4 Salmon Steaks with skin on (6 oz. each)
1-2 heads of broccoli, chopped into bite-sized pieces
2 tbsp. fresh dill (optional)
Salt and fresh ground pepper
2 tablespoons balsamic vinegar

Preheat oven to 450 degrees. Coat a 13×9 baking pan with 1 tbsp. of the olive oil. Place the salmon in the pan and then drizzle it with 2 more tablespoons of the olive oil. Sprinkle salmon with dill. Salt and Pepper to taste. Roast for 8-10 minutes.
Toss broccoli pieces in a medium bowl with the remaining two tablespoons of olive oil. Place in a baking pan in the same oven as the salmon for 6-8 minutes, or until broccoli is a bright shade of green and hasn’t begun to brown on the edges.
Remove salmon to a serving platter. Put roasted broccoli back into the medium bowl and toss with 2 tablespoons of balsamic vinegar and salt/black pepper to taste.
Serve with a crusty bread and this is a super-easy, super-healthy meal for those of you who “hate to cook”.
