2 eggs per family member
1 bag Shredded Cheddar or Mexican mix cheese
Any diced up veggies you have
Butter
In a medium bowl, whisk the eggs until well mixed. Heat a large sauté or frying pan on medium/low heat. When pan is hot, melt a small pat of butter or spray with butter spray.
If you have some Vegetables to add to your omelet or scramble, add them to the pan and stir them for 2 minutes or until they begin to soften. Remove the vegetables from the pan to a plate.
Pour the egg mixture into the pan and let it cook for a minute or two without stirring until you see bubbles forming on the top. Turn the omelet over. If you mess up the turn, don’t worry. Break up the egg mixture, add the cheese and vegetables and make a scramble.
Sprinkle about 1/3 cup cheese and 1/3 cup vegetables onto the egg. Let cook for another minute, then fold, enclosing the cheese mixture and remove it from the heat for another minute to let the cheese finish melting.
Good sides or starters: Fruit salad and/or toast.
