Corn and Potato Chowder

Two cans of gold or white corn
One can of condensed Potato Soup
8 oz. of ham or turkey ham, diced
½ cup roasted red pepper, diced
1 soup can of low-fat milk
1 cup chicken broth
2 tbsp. minced onion
2 tsp. dried parsley
3 shakes of Tabasco or ½ tsp. of picante-style hot sauce (more if you like it spicy)
1/2 tsp. kosher or regular salt
Fresh Ground Pepper to taste

Combine all ingredients in a large saucepan. Bring just to a boil, reduce heat, and then simmer for 25 minutes on low. Serve hot. Serves 4.

Good sides or starters: Spinach salad with Honey Mustard dressing.
